Veganization: Deviled “Eggs”

To make them properly is to measure ingredients with ancestral intuition; to make them almost properly may be to follow a recipe from Southern Living.

Of course, one could argue that hard-boiled chicken eggs are required too. But my Hard-Boiled "Eggs" are wildly close!

Description

Master Hard-Boiled "Eggs", and this classic recipe is simply a matter of course!

Ingredients
  • 1 recipe Hard-Boiled "Eggs"
  • 1/2 cup (125 mL/113 g) vegan mayonnaise (I recommend Hellmann's or Chosen Foods.)
  • 3 Tbsp (45 mL/45 g) sweet pickle relish
  • 2 tsp (10 mL/10 g) yellow mustard
  • 1/4 tsp (1.25 mL) kosher salt (or about half as much table salt)
  • 1/4 tsp (1.25 mL) ground black pepper
  • paprika and chives (optional, for garnish)
Instructions
  1. Prepare Hard-Boiled "Eggs" through Assembly, Step 2.

  2. Mix all but optional garnishes into yolk mixture.

  3. Pipe- or spoon-in filling. Refrigerate until serving time, then garnish and eat!

Note

Chop removed "egg" white portions, then add to leftover filling for an unparalleled vegan egg salad.
